My CSA box this week is loaded with tomatoes, zucchini, basil, cucumbers, corn, eggplant, carrots, cucumbers and sweet onions. I seem to be stuck on an Italian theme with these beauties but all of them would work well in Mexican or Greek cuisines too. They lend themselves to simple greens and grain salads as well….

BrightLine Pescatarian Menu
A Healthy Diet in Progress As you probably can guess, we eat lots of fresh fruits and vegetables but in Mexico it seems as though we eat more meat too. Chicken, pork and beef are on the menu most weeks. We eat small portions, 4-6 ounces at dinner but I still think it’s too much…
Jicama Orange Basil Salad
Unsure what to do with the ugly brown jicama that is showing up at the markets. You can peel it and eat it in sticks with hummus, salsa or all by itself. Serve it with a dash of chili pepper or add it to vegetable and fruit salads. Try it in this Jicama Orange Basil…

This is a low carb, whole food meal with healthy substitutions of low-fat Greek yogurt dressing, no nitrate bacon…
Healthy Mango, Bacon, Caramelized Onion Spinach Salad
Spinach is a powerhouse of vitamins, anti-inflammatories and antioxidants. It is more readily available than kale in rural Baja and in my opinion it’s more versatile and just as nutritious. This salad isn’t your Mom’s bacon grease, sugar soaked wilted spinach. I’ve taken a tiny bit of bacon for flavor, fresh mango and caramelized onion…
Simply Delicious, 4 Ingredient Watermelon Basil Feta Salad
Watermelon is so easy to love by itself but mix it with herbs like basil or lovage, spicy greens like arugula or endive and salty cheese then magic happens. I’ve made this salad many times with arugula but I think I love the basil even more. Make this watermelon basil feta salad as a side…
