Jalapeño Poppers Deconstructed, Easy Low Carb Appetizers are easy to make with none of the fuss of traditional jalapeño poppers but all of the flavor.
Mmmmm, cheese, bacon, jalapeño, and olives.

Caution food porn ahead.
I love every type of jalapeño popper, bacon wrapped, chorizo flavored, low-fat sun dried tomato vegetarian, deep fried, baked, grilled Panko crispy….. you get the idea. I make them once a week.
But these Jalapeño Poppers Deconstructed, Easy Low Carb Appetizers are easier, no need for gloves and you can make and bake them in 15 minutes.
RECIPE
Shred any melting cheese(s) that you like. I used mozzarella and parmesan but Monterey jack pepper, cheddar or chihuahua cheeses would be great.
Make a small mound of cheese and top with jalapeño slices, de-seed them if you want a mild chili experience. I wish I would have added at least 3 slices to each appetizer. Add cooked bacon or chorizo, olives or sun dried tomatoes to make a unique appetizer.
Bake at 425 degrees for 7 minutes until browned and bubbly. Don’t let them burn but I like a nice deep brown on my cheese.
Serve warm or at room temperature.
Serve with sparkling water with lime and cranberry, cold cerveza, a margarita or Chardonnay. Balance your appetizers with vegetable crudités and fruit because these aren’t exactly health food. A few per person would be plenty.
Special Diets?
Low Carb and Keto diets? You bet, these will fit into a low carb and Keto diet.
Whole food, balanced diet? Nothing is off limits and they provide protein, but they are high in saturated fats. Think of them as an indulgence and not a daily snack.
Weight Watcher’s? Of course you can eat anything you want but these are fat and calorie bombs so have one and then fill up on fruits and veggies.
Vegetarian? Skip the meat and try the sun dried tomatoes twist.
