Sugar Free, Sweet Potato, Zucchini Apple Muffins
Basic Recipe:
Combine 1 cup rolled oats, 2 eggs, 1/2 cup roasted sweet potato (or 1 mashed banana), 1/4 teaspoon on salt, any of the following in any combination:
1/2 cup grated zucchini, 1 cup diced apple, 1/2 cup blueberries, 1 cup diced pear, 1/2 cup grated carrot, 1/2 cup raspberries, 1/4 cup chopped walnuts.
Bake in a greased muffin tin for 22 minutes at 375 degrees.
These oatmeal breakfast muffins are a great way to get a serving of oatmeal, fruit and vegetables without sugar or flour.
A few variations for inspiration:
Banana, zucchini, pear
Banana, apple, blueberry
Banana, walnut, zucchini, apple
Banana zucchini, blueberry and apple
Sweet potato, carrot, walnut, apple
I’ve made several variations of whole food, fruit and oat muffins with banana as the sweetener but this was the first one I tried with sweet potato. Sweet potato and banana have very similar macro nutrients but sweet potato has more protein. In my opinion, if you allow bananas in your diet then sweet potatoes should be on the menu also.
These can be made in advance and eaten cold or reheated for a few seconds. What combination sounds good to you?
